Low Glycemic Dinner: Spinach Cilantro Meatballs with roasted Butternut Squash

Spinach Cilantro Meatballs :
2 lbs ground beef
2 1/2 c chopped baby spinach,  packed
1/2 c chopped cilantro
1/2 chopped onion
2 eggs,  beaten
1 tsp cumin
1 tsp season salt
Salt and pepper to taste
Preheat to 400°
Line a pan with parchment paper
Combine ingredients and make small sized balls.
Bake 25 minutes

Roasted Butternut Squash:
I used the precubed Butternut squash from the produce section.
Toss with olive oil,  salt, pepper, & rosemary
Grease a baking sheet with olive oil.
Roast at 400° for 15-20 minutes then flip and add pecans roast another 10 minutes or so.
Put into a bowl and toss with gorgonzola.
