I invested in these little kid 3 compartment plates to help me portion with ease. Large compartment fill with veggies, 1 compartment with protein, 1 compartment with low GI starches.
Tonight dinner was California medley vegetables, gluten free pasta with ricotta and spaghetti sauce, and steak & mushroom kabobs (minus the kabob in the picture )
Steak and mushroom kabobs:
1 lb top sirloin
16 oz white mushrooms (fresh )
1/4 c white wine vinegar
1/4 c olive oil
1 tbsp worchestishire sauce
1tsp. Garlic powder
Salt to taste
And lots of black pepper
Mix marinade in a measuring cup
Cube steak and put in zip lock bag
Add marinade and refrigerate for 1 hour.
Add mushrooms, marinade another hour.
Skewer the meat and mushrooms, this makes about 8.
Grill to the desired wellness of steak you prefer.
