Banana “Ice Cream”

Hi folks. It is no surprise that I like to incorporate bananas into my diet on a very regular basis. But sometimes bananas can be tricky.  Sometimes even when you bring them home green they ripen at hyperspeed. So here is a way to make the most of them.
When they are getting ripe, before they get too ripe- freeze them!
Cut them up and put them in a freezer bag for smoothie making or…an ice cream treat. 🙂
I used about 2 frozen bananas and 1/2 c unsweetened vanilla  almond milk. (More or less as needed ) Put them in the blender and got a soft serve banana ice cream. Add cinnamon,  nuts, fruit, coconut. ..anything you like.

Low Glycemic Dinner: Spinach Cilantro Meatballs with roasted Butternut Squash

Spinach Cilantro Meatballs :
2 lbs ground beef
2 1/2 c chopped baby spinach,  packed
1/2 c chopped cilantro
1/2 chopped onion
2 eggs,  beaten
1 tsp cumin
1 tsp season salt
Salt and pepper to taste
Preheat to 400°
Line a pan with parchment paper
Combine ingredients and make small sized balls.
Bake 25 minutes

Roasted Butternut Squash:
I used the precubed Butternut squash from the produce section.
Toss with olive oil,  salt, pepper, & rosemary
Grease a baking sheet with olive oil.
Roast at 400° for 15-20 minutes then flip and add pecans roast another 10 minutes or so.
Put into a bowl and toss with gorgonzola.

Crustless Quiche

8 eggs
4 tbsp ricotta cheese
1 chopped onion
1/2 c sliced mushrooms
2 1/2 c organic baby spinach
3 slices Pepper Jack cheese
Salt & pepper to taste
1  tbsp coconut oil

In a medium skillet saute onions with coconut oil.
Meanwhile,  add eggs and ricotta to a bowl and beat together .
Add mushrooms,  salt and pepper and whisk
Add spinach  and fold in until coated.
Add sautéed onions into mixture and stir in slowly.
Pour back into pan and cook over medium heat until most of the liquid is gone and edges browned.
Cut heat in half and cook another 20 minutes or until liquid is absorbed.
Add slices of cheese and let melt.
Cut and serve warm.
