This is my favorite mock soup to make. It mimics the Olive Garden version. Great for cold, rainy days.
2 3/4 c Chicken broth
1/4 c heavy cream
1 medium russet potato
2 c chopped kale
1/2 lb sweet Italian sausage (bulk)
Salt and pepper to taste
1/4 tsp red pepper flakes
Add liquid to pot over medium heat
Chop potato into quarters then slice 1/4″ thick. Add to pot.
Chop kale. Add to pot.
Brown sausage and break up into bite size chunks. Add to pot
Add red pepper flakes, and salt and pepper.
Cover and simmer 1 hour stirring occasionally.
