Eggs are super easy to incorporate into any meal. My late lunch today was a 5 egg omelette.
Add 1 can sliced mushrooms and a generous squirt of spicy brown mustard.
Add 1/2 diced green pepper, and 1/4 diced white onion to oiled skillet on medium heat.
Sauté until fragrant. Keep stirring so they won’t stick.
Whisk egg mixture and add salt and pepper before adding to the pan.
Scramble until nearly all liquid is gone.
Sprinkle with shredded cheddar.
