Porcupine Balls

One of the things I have been craving lately as the weather gets rainy and colder is comfort foods. One of the things that reminds me of home is a family recipe: Porcupine Balls.

What is a Porcupine Ball? It is basically the inside of a stuffed pepper and instead of adding it to the inside of a pepper, you dice a pepper and put it in the ball itself. The rice looks like the quills of a Porcupine, hence the name. 🙂 Here is a good hearty recipe to add to the list of things you can have on diverticulitis diet.

Ingredients:

1 1/2 pound ground beef

1/2 c. uncooked white rice

1/2 c. chopped green pepper

1/2c. chopped white onion

2 tsp yellow mustard

1 tsp salt

2 cans of Campbell’s Tomato Soup

2 cans water

Preheat oven to 350*

Mix all ingredients except soup and water.

Roll meat mixture into small balls 2 inches or so.

Add Porcupine Balls to a glass baking dish

Cover Porcupine Balls with tomato soup then with 2 cans water.

Cover with foil and bake for 1 1/2 hours

Season with additional salt and pepper as desired.

[leftovers can be mixed with another can of soup and water to make stuffed pepper soup]
