Tuna stuffed tomatoes

These days I can’t eat tomatoes like I.used to. And I love them. Where there’s a will, there’s a way!
Scoop out all the ‘meat’ and seeds.
Fill with tuna salad. I add dillweed, mayonnaise, and sea salt and cracked pepper.

Herbs De “Im-Provence” Pork Chops

If you have Herbs De Provence, use that! I didn’t so I made my own herbal concoction. Hence the name. I improvised. 🙂
Herb de Im-Provence mix:
1 tbsp dried thyme
1 tbsp ground thyme
2 tbsp Rosemary
2 tbsp oregano
2 tbsp dried parsley

Salt and pepper both sides of 2  boneless pork chops. Then press Herb mix onto both sides.

In a hot pan add olive oil until smoking. Sear both sides of pork chops. About 1 minute per side depending on thickness.

Mix 1/6 c honey, 1 tbsp Dijon mustard, 1 tbsp minced garlic and 2 tbsp lemon lime pop or sparking water. Pour over pork chops in pan.

Add pan to preheated 350° oven for 15 minutes.
When done, remove from pan and plate. Add pan with drippings to hot stove. Add 2 tbsp butter and once around with Triple Sec or White wine. Pour over chops. Serve warm.

I love eggs, from my head down to my legs!

Eggs are super easy to incorporate into any meal. My late lunch today was a 5 egg omelette.

5 eggs

Add 1 can sliced mushrooms and a generous squirt of spicy brown mustard.

Add 1/2 diced green pepper, and 1/4 diced white onion to oiled skillet on medium heat.

Sauté until fragrant. Keep stirring so they won’t stick.

Whisk egg mixture and add salt and pepper before adding to the pan.

Scramble until nearly all liquid is gone.

Sprinkle with shredded cheddar.
