Green Onion & Lemon Chicken kabobs

This was the first dinner prepared on the leaky gut diet. This was paired with a mixed greens salad. Very tasty!

Ingredients:
4 boneless, skinless no hormone,chicken breasts
1 bunch green onions, tops and bottoms cut off
5 garlic cloves, minced
Zest of 2 lemons
Juice of 4 lemons
4-5 lemons, sliced
2 tbsp dried oregano
1 c olive oil
Salt and pepper to taste
Also soak 6 wood skewers 10 minutes or over night to use.

To prepare chicken: cut into 3 strips length wise, then into 1 inch cubes.
Add to a large bowl.
Add 1 c olive oil
Add zest & lemon juice
Add oregano
Add garlic
Add salt and pepper
Stir well to coat all pieces.
Marinate 30 mins minimum, but up to 8 hours overnight.

Cut the green onions into 1 inch segments.

Once chicken has marinated add to skewer in this pattern:
Chicken
3 pieces green onion
Chicken
Lemon slice
Repeat

Grill for 20-30 minutes, turn often (every 5-9 minutes)
