Get 1 pot to cook your soup.
Over medium heat add 1 tablespoon coconut oil.
Add 1 lb chicken cut into cubes
Add 4 stalks roughly chopped lemon grass
Cook chicken thoroughly. Add salt and pepper to taste.
Add 1 can coconut milk
Add 1 1/2 c chicken broth
Add 5-6 oz baby spinach
Add 1 large bunch green onion, chopped.
Add 1 bunch cilantro, chopped.
Add 1 tbsp curry powder
Add 1/2 tbsp ginger powder
Add the juice of 1 lime
Add 1/2 lime to the soup.
Let all come to a slow boil, stirring frequently so spinach can wilt.
When it reaches a boil, cover and simmer 20 minutes.
Remove 1/2 lime before eating.

4 chicken breasts, boneless
Preheat to 400°
In a blender add:
2 bunches cilantro
1/3 olive oil (more if needed)
2 cloves garlic
Salt and pepper to taste
Blend until it looks like pesto
Put chicken in a bowl. Add cilantro mix.
Add the juice of 1 lime and the zest of 1 lime. Coat and refrigerate 1 hour.
Bake 1 hour.
