Breakfast Ham Egg and Cheese Cups

Preheat oven to 375°
Spray a muffin tin with non stick cooking spray
Ingredients:
Sliced ham: 1 piece per muffin cup

Egg mixture:
4 eggs
1/2 c Fiber One cottage cheese
1 tsp Dijon mustard
1/2 c shredded cheddar
1 tsp Italian seasoning
Salt & pepper to taste.
Whisk together.

Pour egg mixture into the ham. Do not over fill as the ham acts as the liner for the eggs.

Bake 25 minutes.

Serve warm.
