I didn’t have any fresh peaches on hand. So I used canned for this recipe.
1 can sliced peaches, chopped
1/4 c red pepper, diced
1/4 c shallot, diced
Juice of 1/2 lemon
Cilantro to taste (I used about 1/4 c) chopped coarsely.
Mix and then refrigerate at least 1 hour to let the flavors marry. Eat over shrimp, chicken, pork, or with tortilla chips.
