Gluten Free Pizza: my first attempt

Crust:

1/2 c quinoa prepared
1/4 tsp minced garlic
1/4 tsp Italian seasoning
1/4 c shredded mozzarella
1 egg, beaten

Mix garlic, seasoning, and cheese with quinoa. Then add quinoa mix to egg and mix to a dough like consistency.

Place parchment paper on a cookie sheet and spray paper with olive oil spray.

Bake crust in a preheated 350° oven for 10 minutes.

Toppings:
4 tbsp pizza sauce, home made sauce or Prego Traditional sauce
1-2 handfuls of spinach
Sprinkle liberally with grated parmesan cheese
Top with 3/4 c mozzarella
Bake another 10 minutes.
Let rest 5 minutes before serving.
Crust may be flimsy. Also makes good mini pizzas.
