Whole wheat tortilla soft shells
1 lb chicken tenderloin
4 c fresh organic spinach
2 green onions
Salt and pepper
In a pan over medium heat drizzle with olive oil.
Add diced chicken.
Season with salt, pepper, and Italian seasoning.
Add spinach, rip into pieces and let wilt down. I added half at a time.
Add sliced green onion.
Cook until onions are soft and all spinach has wilted.
In a separate pan, spray cooking spray to pan on medium low heat.
Add tortilla shell and warm one side for 1 minute, then flip.
Add a large spoonful of chicken, spinach mixture.
Add mozzarella cheese
Fold shell in half
Flip once and only leave in pan until cheese begins to melt.
Serve with sour cream.
