Spring pasta

1 bag buttered noodles
1 medium shallot, diced
1 c baby spinach
1 c capers, drained
1 c Fiber One cottage cheese
3/4 c grated parmesan
3 tbsp lemon juice
Olive oil
Salt & pepper

Cook noodles as package directs.
Drain and set aside.
In the same pot you cooked the noodles, reduce heat to medium and add butter. (A few knobs)
Sauteé the shallot until fragrant
Add spinach and allow to wilt.
Add capers and lemon juice
Return noodles to the pot and stir adding more butter and olive oil to keep the noodles from sticking.
Add cottage cheese, stir
Add parmesan, salt and pepper and parsley.
Add more olive oil as needed as you stir to incorporate all ingredients.
