Top O’The Mornin St. Paddy Breakfast

Before I can stock my fridge and pantry for the Aldi challenge, I need to make room by first eating what we have.
This morning I made an Irish flag inspired egg scramble with seasoned home fries.

Seasoned home fries:
3 peeled golden potatoes, cut in half then sliced 1/4 inch thick
1 tsp minced garlic
2 tbsp Italian seasoning
Salt and pepper
Olive oil

Drizzle olive oil in pan.
Add potatoes, salt and pepper and another drizzle of olive oil.
Add garlic and Italian seasoning
Heat on medium heat 8-10 mins or until potatoes are fork tender.
Stir frequently so they don’t stick.

Irish Flag Egg Scramble
6 eggs (I like using these)


1 c. Fiber One cottage cheese
1 sweet orange pepper
2 c. torn fresh spinach
1/2 c. Mozzarella cheese, shredded
1 tbsp minced garlic
1 tbsp Dijon mustard
Salt and pepper to taste
A pinch of parsley

Crack eggs into a mixing bowl and whisk.
Add salt and pepper, whisk.
Chop peppers and add to eggs
Add cottage cheese, spinach, garlic, and Dijon mustard and whisk together.
Fold in 1/4 c mozzarella


Add to a pan over medium heat until almost all the liquid is gone.
Top with remaining mozzarella.
