Breakfast of Champions

I have a bag of apples that need used. So here’s a hearty breakfast recipe…
Apple Cinnamon Quinoa

Ingredients:
1 c cooked quinoa (1/2 c uncooked)
2 gala apples, peeled and diced
Cinnamon
1/3 c brown sugar
Butter (real!!!! Or I use Fleischman’s made with olive oil)
2 tablespoons plain or vanilla Greek yogurt
1 tablespoon honey

Prepare quinoa as package directs.
While that is cooking, put a small pan on medium heat until warm
Add butter to coat the bottom of the pan
Add diced apples and sautee with a dash of cinnamon for 3 mins
Add more butter as needed so there is always a small amount of liquid
Add brown sugar and stir to coat, keep on medium heat another 2 minutes
Simmer for an additional 3-5 minutes then remove from heat. They should look like this:

When quinoa is done add to a medium sized bowl.
Add a liberal dash of cinnamon.
Add yogurt and honey. Mix well.
Add in the apples and stir to incorporate.
Top with yogurt if desired. Serves 2-4.
