Friday Dinner During Lent

Tonight I made: Blackened tilapia, broccoli casserole, and stove top Mac n cheese. Everything turned out delicious and very Catholic friendly. 🙂
Blackened Tilapia
Ingredients:
4 boneless tilapia fillets
Taco seasoning (home made or 2 packets of the store bought)
Olive oil

Heat frying pan to medium heat
Rinse and pat dry tilapia
In a separate shallow dish dump the taco seasoning.
Press towel dried tilapia into the taco seasoning on both sides.
Place 2 filets at a time in olive oil pan over medium heat.
Cook 3 minutes on one side.
Flip carefully.
Cook 2 mins on the other side.
Repeat with remaining filets

Stovetop Mac n Cheese
Ingredients:
2 c skim milk
2 c pasta
2 c shredded cheese
1 tbsp Dijon mustard

In a medium sauce pan add milk and pasta. Over low heat bring to a simmer.
Simmer 20 minutes or until noodles are tender. Stirring frequently.
Add mustard and cheese when most of the milk is absorbed.
Stir and cook until thickness consistency is reached.
Remove from heat.

Broccoli Casserole
Ingredients:
2 packages frozen broccoli florets
1 can cream of mushroom soup
1 packet dry onion soup mix
1/2 c mayonnaise
1/2 c shredded mozzarella
1 c shredded cheddar
1 egg

Preheat oven to 350°
Cook broccoli in microwave and drain well.
In separate bowl combine all other ingredients reserving 1/2 c shredded cheddar.
Once broccoli is drained coat evenly with mixture and add to casserole dish.
Bake 20 minutes.
Add 1/2 c shredded cheddar and bake an additional 5 minutes to melt cheese.

This might be making a comeback. It was Deanna tested, John approved!
