Hummus Chicken and Spinach Linguini with Mushrooms

Ingredients for Hummus Chicken:
2 large boneless, skinless chicken breasts
Lemon juice (fresh or bottled)
Salt and pepper to taste
Small tub of regular hummus
Curry
Cumin
Directions:
Preheat oven to 400°
Poke your chicken
Squirt it with the lemon juice to coat the top
Add salt and pepper
Spoon hummus on top of the chicken and spread so it is about 1/4 inch thick, covering the entire breast
Sprinkle with curry and cumin evenly
Bake for 25-30 mins

Spinach Linguini with Mushroom ingredients:
1/2 lb spinach linguini
2 small cans mushroom stems and pieces, drained
1 tbsp minced garlic
Olive oil
Parsley
Salt and pepper
1 tbsp Mrs. Dash Original Blend
A little less than 1/4 c grated parmesan cheese (the shaky kind)
Cook linguini until al dente.
In a small pan add a few swirls olive oil.
Add garlic and sautee until fragrant.
Add mushrooms, salt, pepper and parsley. Sautee mushrooms 3-5 mins on low heat.
Once pasta is drained reserve some starch water.
Add pasta a few splashes of starch water and sauteed mushrooms to the pot over low heat and toss together.
Add more olive oil if needed and all other ingredients. Toss and serve warm.
Makes 2-4 servings
