Seedless/ Skinless Cucumbers in Honey Mustard Dill Dressing

This was my first “meal” after following the sort of B.R.A.T. diet. I say meal because I used an entire English cucumber [English cucumber= seedless] and was all that I ate because the pain and also the medication I was on was making me have no appetite. It makes a good snack or side to a meal or a salad alternative. Enjoy!

Ingredients:

1 English cucumber, peeled, and sliced in half, then half again, and cut into bite sized pieces.

Dressing: Hint :use a glass carafe for this with a lid so you can shake it. I use the one that is meant for the Good Seasoning dressings. You can find one in the salad dressing aisle.

1 tbsp Dijon mustard

1 tbsp honey [bee pollen or honey is great for diverticulitis]

3 tbsp red wine vinegar

5 tbsp olive oil

1 tbsp dill weed

1/2 tsp both salt and pepper

1-2 tbsp water

Combine all ingredients except the water to your carafe. Shake well. Add water 1 tbsp at a time to get the thinner consistency you prefer as the honey makes it thick.

Toss the cucumbers in a bowl with the dressing, top with more salt and pepper if desired.  Serves 2..or 1 hungry mama!
