Quinoa Spinach Salad with Dijon Pear Vinegarette

I am making a super food salad for dinner tonight. And for those of you who like fruit on your salad, this is right up your alley!

Salad Ingredients:

Roughly 3 cups of baby spinach

1 cup cooked quinoa [1/2 c. dry]

1 diced gala apple [skinned], chopped into bite size pieces

1 cup diced pears [skinned if using fresh], or what I used: 2 of the individual cups of Del Monte diced pears. Reserve the liquid.

1/2 c. Italian Feta aka Ricotta Salata

In a large bowl or container, combine all above ingredients and toss well.

Dressing Ingredients:

Use the carafe that I mentioned before in a previous post. The kind you can buy in your salad dressing aisle.

1/2 c. pear juice, or the reserved liquid from the individual cups of diced pears

1/2 tsp minced garlic

2 tsp maple syrup

1/4 c olive oil

3 tbsp Dijon mustard

1 1/2 tbsp apple cider vinegar

3 tbsp honey

Combine all ingredients in the carafe and shake to incorporate.

This makes 4-6 servings of salad. The dressing will last up to a week in the fridge.
