Lemony Quinoa Salad with English Cucumber

Quinoa is a versatile food that can be served hot or cold. It is a great source of fiber.


1/2 c. Quinoa (prepare as package directs)

1/2English cucumber, peeled and cut into small chunks

1 tbsp olive oil (more if needed)

Zest and juice of 1 lemon

1/2 tbsp minced garlic

1 tsp of Mrs. Dash Original blend

2-4 tbsp Ricotta Salata (Italian Feta)

Salt and pepper to taste

Fresh or dried parsley amount of your choosing


Prepare Quinoa as directed. Once its set, remove from heat to cool.

Combine: olive oil, zest and juice of lemon, garlic, Mrs. Dash, salt and pepper, and parsley.

Whisk ingredients together.

Combine Quinoa with dressing. Toss to coat.

Add cucumber and Italian Feta. Toss.

Eat fresh. If this sits overnight it will get very potent.
