Cottage Cheese Scrambled Eggs & Johnnycakes

Step by step pictures with the cottage cheese scrambled eggs.

Step 1: Crack 4 brown eggs into a mixing bowl


Step 2: Add salt and pepper to taste


Step 3: Add 2 tbsp Fiber One cottage cheese and whisk


Step 4: Add 1 tbsp Italian seasoning- whisk


Step 5: Add my “secret ingredient” that I like to add to all of my scrambled egg concoctions…. Dijon Mustard. Just a few squirts. [I am also a fan of Horseradish Mustard, but there can be mustard seeds in there- watch out!]


Step 6: Add butter to a pan over medium heat


Step 7: Scramble until all liquid is absorbed


Once the liquid is absorbed, then you can remove from the heat and eat. Serves 2.

Johnnycakes Recipe:


This is a low carb alternative to regular pancakes and they smell and taste great!! Special thanks to my boyfriend, John, for sharing his recipe for “Johnnycakes”.


8 oz cream cheese

8 eggs

1-2 tbsp cinnamon [more or less to taste]

1 tbsp vanilla extract [more or less to taste]

Combine all ingredients in a blender and liquefy

Pour out into a pan over medium heat just like you would regular pancakes. Turn after a few minutes and cook evenly. Makes 5 large [dinner plate] Johnnycakes.

Breakfast is served! 1 serving of Cottage Cheese Scrambled Eggs, 2 servings of Johnnycakes, and some extra crispy, nitrate free [found at Giant Eagle] bacon. Thanks for reading and happy eating!
